The project was implemented within the Swiss-Ukrainian DECIDE project, carried out in Ukraine by a consortium including DOCCU NGO and PHZH International Projects in Education, with the support of the Embassy of Switzerland in Ukraine.
Project Goal
To enhance the quality, competitiveness, and prestige of vocational culinary education while focusing on the reform of the school nutrition system.
The project was implemented across three key areas:
- Expert Support for Culinary Hubs
Culinary hubs were established as training centers to improve the skills of school cafeteria chefs, supporting the broader school nutrition reform efforts. - Training of Master Trainers and Trainers Using a Cascade Method
Participants engaged in practical training sessions to:
- Learn best practices in organizing kitchen workflows according to new school nutrition standards.
- Gain hands-on experience in preparing and processing meals from the updated school menu using modern kitchen equipment.
- Obtain certification, enabling them to train future chefs at culinary hubs. - Promoting Vocational Culinary Education
This component aimed to increase awareness and interest in culinary careers through:
- Media Campaign: A social media initiative highlighting the importance, benefits, and career potential of vocational culinary education.
- Educational Module Development: Contribution to a course module for school administrators on implementing school nutrition reform.
- Career Guidance & Skills Competition:
• A national competition for 8th-9th grade students and vocational students, focusing on culinary skills, creativity, and career exploration.
• Around 300 students from six regions participated, trying their hand at cooking, pastry-making, bartending, and serving.
• Vocational students served as mentors, sharing professional insights and guidance.
• The grand final featured a healthy cooking competition, widely covered in social media, regional, and national media outlets.
• The event demonstrated that vocational careers are valuable, future-oriented, and essential for Ukraine’s recovery.
- 268 vocational instructors across Ukraine completed advanced training.
- 53 top-performing instructors were selected for practical training based on their test results.
- 15 professional skills competitions took place across 5 regions, engaging 300 students.
- A high-profile media campaign was launched:
• 13 promotional videos were developed.
• 3 videos were published on Facebook.
• 10 videos were released on TikTok. - A new course module on school nutrition reform was developed for school administrators.
This project not only promoted vocational culinary careers but also contributed to the long-term improvement of school nutrition. With newly trained master trainers, future generations of chefs will receive high-quality education, ensuring that schoolchildren across Ukraine have access to nutritious, balanced, and delicious meals.
